Loire Valley
Trinqu’âmes (a pun that means “let’s toast to our souls”) is made under the négoce label of Coralie & Damien Delecheneau, who for the past few years have been buying organic grapes from neighbors. The vineyards are located between Amboise and Oisly, in Touraine, where the sandy silex-rich soil over clay allows a ripe expression of Sauvignon Blanc without diminishing its vibrancy.
The Sauvignon Blanc grapes used for this bottling are hand-harvested, pressed directly, settled overnight, and then fermented spontaneously. The wine is aged in cement for six months before being lightly filtered.
The wine shows notes of lemon and lime zest, grapefruit, lemongrass, and sage, with a hint of white pepper and passion fruit. Pair it with fresh goat cheeses; a range of seafood dishes, such as oysters with cucumber and lime granita; green tomato and cucumber gazpacho; or Caesar salad.
